Introduction

Just winged it tonight and came up with this KILLER lasagna recipe. My kids and I loved it! I like making the rolls, because it's easier to determine a single serving. Also, these freeze well for an easy meal another night. I'm sure some of the ingredients could be tweaked to further lower the calorie count and up the nutritional value. One obvious addition could be spinach, and an obvious calorie/fat cutter could be low-fat cheese products. But, don't skimp on the seasonings! Enjoy! Ingredients

    lasagna noodles (1/2 box)
    1 15-oz. container ricotta cheese
    1/2 c. parmesan cheese, grated
    1 1/2 c. mozarella cheese (divided)
    1 egg
    1 tsp. garlic, minced
    1 T. italian seasoning
    1/2 tsp. salt
    1/4 tsp. pepper
    1 jar pasta sauce

Tips

- Prepare the pasta al dente--overcooked pasta tears more easily.
- When spreading the cheese mixture, leave a 1/2-inch space on each end of the lasagna to make rolling easier.


Directions

Preheat oven to 400 F.

1. Prepare lasagna, according to package.

2. Mix together ricotta, parmesan, 1 c. mozarella, egg, garlic, italian seasoning, salt, and pepper.

3. In the bottom of a 13x9 baking dish, spread a small amount of pasta sauce (just enough to cover the whole bottom).

4. Spread a layer of cheese mixture on each lasagna strip. Roll and place seam side down in baking dish.

5. Bake 20 minutes at 400 F. Top with remaining mozarella and bake another 15 minutes, until sauce is bubbly.

Serving Size: Makes 10 rolls (serving size is 2 rolls)
