Introduction

I like knowing that whole ingredients go into my food. I'm tired of buying the premade meatballs, so I came up with this recipe. These are very flavorful (cut back on the italian seasoning if you don't like a lot of flavor!), and I like to make a HUGE batch and freeze them for an easy meal another night. These are very flavorful (cut back on the italian seasoning if you don't like a lot of flavor!), and I like to make a HUGE batch and freeze them for an easy meal another night.

Ingredients

    1.5 lb. ground beef, lean
    1 onion, small
    1/4 c. italian seasoning
    4 cloves garlic, finely chopped
    3/4 c. parmesan cheese, grated
    2 eggs
    3/4 c. bread crumbs (or oatmeal)
    1/8 c. milk, skim
    1/2 tsp. salt
    1/4 tsp. pepper

Tips

- Use parchment paper (or lightly grease) to keep meatballs from sticking to the pan.
- Make a double batch and freeze the extras for an easy meal another night.
- Simmer in marinara sauce, brown gravy, or other sauce of your choice before serving.


Directions

1. Preheat oven to 350 F.
2. Mix all ingredients.
3. Roll into small (1.5"-2" diameter) balls and place on cookie sheet.
4. Bake 20-25 minutes at 350 F, until lightly browned and cooked through.

Serving Size: Makes 8 to 10 servings
