Introduction

This was my mom's recipe and is the best baked rice custard pudding. This was my mom's recipe and is the best baked rice custard pudding.
Number of Servings: 6

Ingredients

    White Rice, long grain, 1.5 cup
    Milk, nonfat, 1 cup
    Egg, fresh, 1 extra large
    Granulated Sugar, .25 cup
    Vanilla Extract, 1 tsp

Directions

Combine milk, egg, sugar and vanilla in a blender and blend well. Spray baking dish with Pam and put cooked rice in the bottom. Add the milk mixture. With a fork, blend rice with milk. Place in a 275 degree oven. Baked for half hour increments. After a half hour stir so rice won't settle to the bottom. Pudding is done when a knife inserted in the center comes out clean. (Once I see that the pudding is setting up, I will top with a cinnamon/sugar mix. Not added into the nutrition info.)
