Quick, easy and great for those trying to reduce cholesterol.

Batter is very thin once mixed together but the oat bran soaks up a lot of that in the baking process and keeps the muffins nice and moist.

Batter is very thin once mixed together but the oat bran soaks up a lot of that in the baking process and keeps the muffins nice and moist.

Ingredients

    2 1/4 cups oat bran
    1 tablespoon baking powder
    1/4 cup brown sugar
    2 bananas mashed
    2 eggs
    2 tablespoons agave nectar or honey
    1/4 cup walnuts

Directions

Preheat offen to 425 degrees f. Line a standard muffin tin with paper cups.

In a large bowl, whisk together the oatbran, baking powder and brown sugar. In a separate medium bowl, mix together the mashed bananas, eggs and agave nectar.

Add the wet ingredients into the dry ingredients and whisk until combined. Fold in the walnuts. Divide the batter evenly between the 12 muffin cups. Bake until the muffins are lightly browned and a knife inserted in the center comes out clean, about 12 to 15 minutes.

Cool muffins in the pan for 5 minutes, then remove to a wire rack to cool completely.
