*Turkey, Ground turkey, 93% lean, 19.2 oz
Beans, black, 439 grams (one can)
*Diced Tomatoes and Green Chilis, Canned, 1.81 cup (one can)
*minute rice - brown rice, 1 cup cooked
*Sauce - Red Enchilada Sauce-Old El Paso,or similar brand 1.25 cup
*Sante Fe Tortilla Whole Grain Tortillas, 8 serving
I top with salsa, lettuce and light sour cream but those are NOT listed in the nutritional information. I also add some Mexican seasonings to the turkey mixture because I like spicier food than most. Play with it and season to taste.
In large skillet brown the ground turkey and drain
Drain and rinse black beans add to skillet
Add canned tomatoes do not drain
Add cooked rice
pour enough enchilada sauce to coat the bottom of a 9x13 baking dish
In each tortilla Add a little less than 1/8 cup cheese, 3/4 cup meat mixture, roll and place in baking dish
pour remaining sauce over top of enchiladas and sprinkle the small amount of cheese remaining on top.
Bake at 350 for about 10 minutes and serve.
