An easy Taco Casserole. An easy Taco Casserole.

    1lb ground turkey
    1 15 oz can of black beans (drained)
    1 15 oz canned corn (divided)
    1/2 cup chopped onions
    1 cup Green Peppers
    1 20oz bag Bob Red Mill Glution Free Cornbread Mix
    (or two Jiffy Corn Bread Mix)
    1 package of taco seasoning
    1.5 cups cheese (divided) I used an Kraft mexican mixture, use what you would like.


1. Heat oven to 350 degrees F.
2. Brown meat with onions and peppers in large skillet.
3. Add the taco seasoning, follow seasoning packet's directions.
4. Add black beans until warm through. Pull from the meat mixture from the heat.
5. Prepare muffin batter as directed on package; mix in half the can of corn and spread half in the prepared baking dish.
6. Use the left over corn and half of the cheese and spread over corn bread mix.
7. Spoon meat mixture over corn/cheese layer
8. Mix left over cheese in left over corn bread batter and spread on top of meat. Use a fork to easly spread the batter.
9. Bake 30-40 min. or until toothpick inserted in center of cornbread topping comes out clean. Cool slightly.
