Ingredients

    2 whole skinless, boneless chicken breasts, poached and chopped
    1 bag great northern beans, prepared according to package directions
    1 small yellow onion, chopped
    1 small red pepper, chopped
    1 can corn, drained
    2 TBSP. cumin
    1 TBSP. Creole seasoning
    salt and pepper to taste

Directions

Makes 12 1-cup servings

Quick soak beans and boil them according to package directions.

While the beans cook, poach chicken breasts in boiling water about 20 minutes or until cooked through.

When breasts are cool enough to handle, chop into pieces.

Steam onions and peppers together in the microwave, I use one of those microwave bags but you can put them in a bowl of water and microwave for about 3 minutes. Drain water.

As the beans are cooking and beginning to thicken (after about an hour) add chicken, onion, peppers and corn to the bean pot.
Add the spices and allow flavors to cook together for about 1/2 hour more.
Salt and pepper to taste. Freezes well.
