    2 lbs beef sirloin, trimmed and cut into cubes

    2 Tbs olive oil

    1 onion, sliced

    2 cups sliced mushrooms

    2 cloves garlic, crushed

    3 Tbs flour

    1/2 tsp dried thyme

    1/4 tsp pepper

    1/4 tsp nutmeg

    1 1/2 cups beef broth

    1/2 cup dry red wine (or more beef broth)

    2 Tbs chopped fresh parsley


Brown beef cubes in olive oil over medium heat. Turn cubes frequently to ensure even browning. Add the onions and cook 2 minutes longer. Stir in mushrooms and garlic. Reduce heat to medium low and sauté until mushrooms are browned.

Combine flour, thyme, pepper and nutmeg in a small dish. Sprinkle over the meat and mushroom mixture, stirring well. Stir in the red wine and beef broth. Stir until liquid comes to a boil and begins to thicken. Reduce heat to low, cover loosely and simmer for 20 minutes.

Serve over rice. Garnish with chopped parsley
