A modified version of my earlier tapioca pudding. A modified version of my earlier tapioca pudding.
Number of Servings: 8


    2 c whole milk
    3.33 c nonfat milk
    .5 c pearl tapioca
    2 beaten large eggs
    1 c Splenda
    2 tsp vanilla


Combine first 5 ingredients in a large nonreactive pan, stirring constantly until mixture thickens and bubbles cannot be stirred down.

Remove from heat and stir in vanilla. Cool.

Serving Size: Makes 8 servings of approximately 1 cup each.
