Introduction

Ingredients

    1 small onion, chopped
    1 Tbsp garlic
    1 Tbsp canola oil
    2 chicken quarters
    3 cups water
    1 cup chopped carrots
    1 bell pepper, chopped
    3 medium potatoes chopped
    1 tbsp paprika
    1 tsp crushed red pepper
    2 bay leaves (can use crushed, but I prefer whole)

Tips

Can make with frozen bone-in chicken if you forget to defrost chicken (as I usually do) but cook time will be a bit longer. Don't brown chicken if it is frozen. Keep in mind the calorie count will be a bit higher because of the skin still on the chicken.


Directions

In a large pot, heat oil over medium heat. Add onion and garlic and saute until the onions are starting to turn translucent. Add chicken and brown. Add water, carrots, bell pepper, potatoes, red pepper, paprika and bay leaves. Simmer for about 15 to 20 minutes covered, stirring occasionally. Add tomatoes and simmer another 20 minutes, stirring occasionally. Uncover for last 5-10 minutes. Cook until chicken is done and potatoes are tender.

You can removed the bones and serve as a soup in a bowl, or served the chicken with bones-in over stew in a shallow dish.
