Elle's Breakfast Cookies
3 mashed bananas ripe
1/3 cup unsweetened applesauce
2 cups uncooked quikc-cooking oats
1/4 c skim milk
1/2 c dried cranberries (or raisins, or dried fruit of your choice)
1 tsp vanilla extract
1 tsp cinnamon
1 tbsp granulated sugar (or Spelnda, or sweetener of your choice)
If you add some chopped nuts, you have a grab and go breakfast that includes protein as well as fruits and grains. Cardamom fans may want to substitute that spice for the cinnamon. You can make a huge batch of these and freeze.
Serving Size: Makes 12 large or 24 small cookies (nutrition information is based on 12 large)
