Introduction

These waffles are a fantastic, high-protein way to start the day. Make the batter the night before and store in the refrigerator until the next morning. Ingredients

    1 cup cottage cheese undrained (I used 4% for the calculations in this recipe.)

    6 large eggs
    1/4 cup canola or vegetable oil (I used canola.)
    1/2 tsp vanilla
    1/2 cup all purpose white flour
    1/4 tsp salt


Tips

It may look like you need more batter but don't do it. The batter expands. I put 20 min. in the cook time because it all depends on how many waffles you make


Directions

Put all ingredients in a blender (liquid first then dry). Blend until smooth. Makes waffles on medium high or slightly lower. These waffle take a little longer to get browned. Just keep an eye on them. After you make one or two you will have the feel for them. I used a round shaped Oster waffle maker and 1/2 cup of batter for each waffle.

Serving Size: Makes approx 6 1/2-cup waffles.
