Number of Servings: 3


    2 cans (14.5 oz each) of diced tomatoes
    Bacon, 3 medium slices, diced (for vegetarian-just use 2 tbl of olive oil)
    Garlic, 1 clove minced
    Onions, raw, 1 cup, chopped
    Carrots, raw, 1 cup, chopped
    Celery, raw, 1 cup, diced
    Swanson Chicken Broth 99% Fat Free, 1 cup (or use vegetable broth for Vegetarian)
    Milk, 1%, .5 cup (optional)
    Marjoram, dried, 1 tsp or to taste
    Basil, 1 tbsp or to taste
    Salt, 1 tsp or to taste
    Pepper, black, 1 tsp or to taste


Cook bacon pieces in a large pan over medium heat until the fat has been rendered and bacon looks crispy. Then add in chopped onion, celery, carrots and garlic. Saute until soft. Deglaze pan with chicken (or vegetable) broth (in other words--add broth and use a wooden spoon to scrape brown bits from bottom of pan). Remove and put contents in a food processor or blender and puree. Put puree back into pan. Then puree the tomatoes and add them. You can leave them as chunky or as smooth as you like. Bring up to a simmer and season with salt, pepper, marjoram and basil. Stir in the milk (optional) and it is ready to serve.

Makes three healthy portions.
