    Beef, top round - thin slice - 1 pound
    Spinach, fresh, 3 cup
    *Peppers, sweet, red, fresh, 1 medium
    Onions, raw, .5 medium
    *Lundberg Wild Blend Brown Rice-1 cup cooked
    Mozzarella Cheese shredded, part skim milk, 2 cups
    Salt, 1 dash
    Pepper, black, 1 dash


I cook for kids so I don't indulge in spice very often but I think you could do wonderful variations of this with all sorts of spices.


Make the rice, Wild rice takes forever - try to do it ahead of time. Put the onion and pepper in a food processor/chopper and make a slurry, add that to the rice. Then proccess the spinach and add that to the rice as well. Cook down.
Salt and pepper the beef slices to your taste and sprinkle the Mozzarella cheese on the beef, then put a scoop of the rice mixture in. Roll it, or bundle it up, however you prefer. beef-edge side down.

I had some extra Mozzarella left over, so I sprinkled it on top.

Put the bundles in a covered baker, or 13"X9" pan covered with tin foil. Cook at 350 for 45 minutes. Let cook uncovered for the last 10 minutes.
