Ingredients

2 tablespoons coconut oil
1 onion, diced
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
3 cloves garlic, crushed
2 cups lentils, washed and picked over
3 cups water
1.5 cup canned, crushed pineapple
Directions
Dice onion & garlic
Heat the oil in a medium pot over moderate heat. Cook the onion with the salt and pepper until golden, about 10 minutes.
Stir in the garlic and lentils and cook for 2 minutes, stirring frequently. Pour in the water, bring to a boil, reduce to a simmer and cook, covered, for 45 minutes.
Stir in the pineapple, remove from heat and serve.
