Ingredients

    12 eggs, 1/4 cup of shredded mexican blend (or cheddar) cheese, 1 tablespoon of low fat milk or half & half, 3 cups cooked broccoli, salt/pepper

Directions

12 eggs beaten with 1 tablespoon of low fat milk or half & half. 3 cups of cooked broccoli (drained). 1/4 of shredded cheese. Salt & pepper to taste. (I also added a bit of red pepper flakes instead of black pepper) .
Preheat oven to 375. Spray 7x11 dish w/nonstick spray, broccoli spread in bottom of dish, sprinkle cheese over broccoli, pour egg mixture over broccoli. Bake for 20-30 min until cheese browns.
