    1 chicken breast cooked and diced into small peices
    2-3 tablespoons taco seasoning (OR a mix of cumin, chili powder, oregano and garlic powder)
    1/4 cup water
    1/4 C plain greek yogurt
    1/4 can drained diced tomatoes or 1/2 C chopped fresh tomatoes
    1/4 C reduced fat shredded cheddar cheese or mexican blend
    1/2 cup chopped onion
    1/4 cup canned and drained black beans
    16 Eggroll wrappers


Preheat oven to 350
Sauté onion in a pan until translucent.
Add cooked and diced chicken.
Add taco seasoning and 1/4 cup water. Stir until well combined.
Add tomatoes and black beans to pan until heated
Remove from heat and let cool slightly.
Add Greek yogurt to pan and stir to combine.
Place 1 egg roll wrapper on a cutting board. Add a spoonful of chicken mixture to wrapper along with a pinch of the cheese. Wrap egg roll tight wetting edges of wrapper slightly with water to get a good seal.
Bake at 350 degrees for 15-20 minutes. Turning half way through.
