Introduction

About 1/2 the calories of traditional banana bread!! No added fat! I use a mixed whole grain flour (white wheat, barley, millet, brown rice, rye, oatmeal, and red wheat) which gives a lighter taste to typical whole grain breads. Ingredients

    3/4 Cup Whole Grain Flour
    3/4 Cup White Flour
    1 1/2 Tsp Baking Powder
    1/4 Tsp Baking Soda
    1/8 Tsp Salt
    1/4 Tsp Ground Cinnamon
    1 Cup Mashed Bananas (about 3 med)
    1 Egg
    1/2 Cup Organic Blue Agave Sweetener
    1 Tsp Vanilla

Directions

Preheat oven to 350. Grease the bottom of a 8x4x2 loaf pan. In mixing bowl combine flour, baking powder, baking soda, cinnamon, and salt and mix well. In another bowl mash the bananas and then combine with the egg, agave, and vanilla. Add banana mixture all at once to the dry mixture. Batter will be lumpy. Bake for 50 to 55 minutes or until tooth pick comes out clean.

    Very Good
    I made this today, only gave 4 starts because it was a tad rubbery. I switched out egg for 1/2 cup of applesauce added nutmeg and 1/2 tsp cinnamon instead of 1/4. Its really tastey but the constancy is new to me ive also never cooked with agave before - 4/17/13
