Introduction

I make this for brunch and its a real HIT! I make this for brunch and its a real HIT!
Number of Servings: 12

Ingredients

    18 eggs
    13 oz cheddar cheese
    15-30 black olives (or green)
    5 tbs chive you can use green onion
    1.5-2 cups sliced mushrooms
    2 cups canned dices tomatoes
    2 tbs of heavy cream

Tips

Serve with sourcream and salsa on the side


Directions

1. preheat oven to 350 degrees
2. whip eggs and heavy cream togehter
3. fold in all other ingredients leaving 1-2 oz of cheese out
4. pour into a 8x12 cassarole dish lightly sprayed or buttered
5. bake for 30-45 minutes
6. spread the remaining cheese on top and let melt

Serving Size: makes 10 medium servings or 15 small servings
