Number of Servings: 4


    2 large sweet potatoes
    I large sweet onion, diced
    2 T olive oil
    ˝ t cinnamon
    1/8 nutmeg
    ˝ ground ginger (fresh ginger can be used but the flavor will be more intense)
    3 c chicken stock (low salt)
    2 cups soy milk
    salt and pepper to taste


Start with a soup pot. Peel and cut the sweet potatoes into chunks. Cook in chicken stock with a cover until tender. Meanwhile in a separate pan sauté diced onions in oil or butter until translucent. Add cinnamon, nutmeg and ginger to the onions and cook one minute to aromatize the spices. Add to the pot with sweet potato broth. Simmer for 20 minutes. Puree with a wand or in a food processor. You may strain the soup for a finer texture but it is not necessary.

Stir in 2 c soy milk or 2% milk and serve hot
