    2 eggplants
    6 cups marinara sauce
    4 Tbsp Nutritional Yeast
    1 1/2 cups fresh spinach
    12 black olives


Preheat oven to 350

Slice eggplants in round slices
lay half of eggplant slices in 9x13 baking pan
layer spinach over eggplant
sprinkle 2 Tbsp of Nutritional yeast over spinach
Put half of your marinara sauce over the spinach
lay the other half of the eggplant slices over that, top with the remaining marinara sauce, then sprinkle on the remaining nutritional yeast

Bake at 350 for 40 minutes or until done.

Top each serving with two black olives, sliced in half.
