    1/2 cup, plus 3 T Low-Sodium Vegetable Stock
    1/2 medium Onion, chopped
    4 cloves Garlic, minced
    A pinch Red Pepper Flakes
    1/2 cup Dry Sherry
    1 15oz can Diced Tomatoes, crushed
    1/2 cup Evaporated Skim Milk
    salt, pepper, parsley, chives to taste


Serve over whole wheat pasta. Great with seafood or sausage added in. If adding a meat, add the pre-cooked meat right before you add the evaporated milk and let it cook in the sauce for a few minutes.


Heat 3 T vegetable stock in a skillet and add the onions, garlic, and red pepper flakes. Saute for about 5 minutes and then add the sherry. Cook down and then add the other 1/2 cup of stock and the tomatoes and bring to a boil. Add the evaporated milk and season with salt, pepper, parsley, or chives to taste.
