Ingredients

    4 cans of diced tomatoes with juice
    1 large can of tomato paste
    1 small onion peeled and chopped
    2 cups of chopped bell peppers (green, red, and/or yellow)
    3 tbl chili powder
    1 tbl garlic powder
    1 cup of broth (chicken or vegetable)
    1 pound of ground chicken
    1 can of white beans (drained)
    1 can of garbanzo beans (drained)
    1 can of pinto beans (drained)
    2 cans of dark kidney beans (not drained)
    1 can of light kidney beans (not drained)
    1.5 cups of cooked barley

Tips

This makes a large batch so we use it to make several meals. It tastes even better reheated the next day.


Directions

In a crock pot empty the cans of tomatoes with juice. Add the tomato paste, the onions, peppers, spices, and broth. Cook on high 3 hours or low 6 hours. In a frying pan cook the chicken and drain the fat. Add the meat to the crock pot along with the remaining ingredients. Cook on high 1 hour or on low 2 hours. Makes 16 servings. Can be refrigerated for several days or frozen and reheated.
