Introduction

This is very tasty, easy to make, and the servings are very filling! It's also healthy thanks to all the vegetables. I adapted this from a Mayo Clinic recipe. Ingredients

    1 cup uncooked ziti
    3 cups diced tomatoes, no salt added (2 cans)
    1/2 cup carrots, slivered
    1 cup broccoli, chopped
    3/4 cup green bell pepper, diced
    1/2 cup mushrooms, chopped
    1/4 tsp. garlic powder
    1 tsp. dried basil
    1 tsp. dried oregano
    1/2 tsp. black pepper
    salt to taste, if desired (I used Salt Sense for less sodium)
    3/4 cup part skim mozzarella shredded
    11 tbsp. grated Parmesan (I use Kraft's grated Parmesan & Romano)

Directions

Preheat oven to 375. Lightly coat a baking dish with cooking spray.

Fill a large pot 3/4 full with water and bring to a boil. Add the pasta and cook until al dente, 10-12 minutes, or according to the package directions. Drain pasta.

In a nonstick frying pan over medium heat, add the reserved juice from the canned tomatoes. Stir in the carrots, broccoli, and green pepper. Saute the vegetables until tender, about 5 minutes. Add the mushrooms and garlic powder and cook for another 5 minutes.

Add the tomatoes, basil, oregano, and black pepper to the vegetable mixture. Cook over low heat for 3 to 5 minutes.

Transfer the cooked vegetables to a large bowl. Add the cooked pasta and mozzarella cheese. Toss gently to mix. Spoon the mixture into the prepared baking dish. Sprinkle with the Parmesan cheese. Cover with aluminum foil and bake 15 minutes. Remove foil after the 15 minutes and then continue baking until hot and bubbly, about another 15 minutes.
