    1 lb Hot Italian Sausage
    3 medium Russet potatoes, sliced 1/4" thick, unpeeled
    1 cup onion, diced
    3 garlic cloves, minced
    6.5 cups chicken broth
    2 cups water
    1/4 cup bacon
    3 cups kale, veins removed
    1 cup heavy whipping cream


I like a lot of broth in my soup so we added two additional cups of chicken stock.


1. Remove sausage casings, break into small pieces, and brown in a skillet. Once cooked, put in stock pot.
2. Add chicken broth, garlic, and water to pot and turn to medium heat.
3. Cook bacon in skillet until crisp and let cool. Crumble and add to pot.
4. Sauté the onions until translucent. Add to pot.
5. Slice potatoes into 1/4" thick slices and then in half and add to pot, cooking until tender.
6. Add kale and cream. Cook for about 15 minutes until kale is tender.

Serving Size: Makes 16 - 1 cup servings
