    1 cup oatmeal
    2 cups milk
    1 1/2 cups whole wheat flour
    1/2 cup ground flax seed
    1 tbsp brown sugar
    1 tbsp baking powder
    1/2 tsp salt
    2 large eggs


In bowl, pour milk over oats; let stand for 5 minutes.

In separate bowl, whisk together flour, flax seed, sugar, baking powder, and salt. Whisk eggs; pour over dry ingredients. Pour milk mixture over top and stir just until combined.

Heat large nonstick skillet over medium heat; brush with some oil. Pour about 1/4 cup batter for each pancake into skillet, brushing skillet with more oil as necessary; cook until underside is golden and bubbles break on top but do not fill in, 1-1/2 to 2 minutes. Turn and cook until underside is golden, 30 to 60 seconds.

Serving Size: makes 12 pancakes
