    1 whole egg
    4 egg whites
    1 T nonfat feta cheese
    4 spinach leaves
    1 grape tomato, sliced


mix egg/egg whites together in a bowl.
In a microwave proof cup or bowl place four spinach leaves and sliced grape tomato. add 1 T nonfat feta cheese. Pour egg mixture over. Microwave on high for 2 to 2 1/2 minutes watching closely so that eggs are not over cooked. You just want the eggs to cook through.
