These are stuffed peppers but instead of rice, I use quinoa.
These are stuffed peppers but instead of rice, I use quinoa.

Number of Servings: 1


    4 green peppers
    1/2 c quinoa
    1 can tomatoes
    salt and pepper to taste
    1/4 tsp of garlic
    2 TBSP onion
    1 TBSP olive oil


Cut the tops off of 4 peppers and deseed/devein them.

To start the quinoa, add olive oil and then onions and garlic and saute until brown. Once brown, add your quinoa and toast. once it's fully coated, add twice the amount of water and let boil. Once it's boiled, turn the heat down to low and cover. Let sit for 15-20 minutes.

Saute the ground turkey adding in seasoning as you like (I like to use the salt, pepper, and add garlic). Once it's browned, add canned tomoatoes and cook all the way through.

Cut the tips from the peppers and place into a pan. Heat oven to 350.

Once all moisture is out of the quinoa and the ground turkey, combine and mix well. Then spoon the mixture into each of the peppers and place into the oven.

After 15 minutes, put mozzaralla on top of the pepper and cook until cheese makes a crust.
