    1/2 cup pineapple juice
    2 tbsp lime juice
    1 sm habanero pepper seeded and minced
    1/2 med red onion diced
    1 lb chicken breast (boneless, skinless)

    1 c shredded red cabbage
    1/2 c shredded carrot
    1/2 med red onion sliced thin
    1 Tbsp rice wine or white wine vinegar
    handful chopped fresh cilantro
    dash black pepper to taste

    4 pineapple rings - fresh is best
    salsa (optional not incl in cals)
    tortillas (not incl in cals)


2 sm tortillas each or 1 large per serving.
Chicken can be substituted with 1/2 - 1 lb shrimp, beef or 1 pkg tofu.


Combine marinade ingredients and add chicken. Marinate 30 min or overnight.

In med bowl combine all slaw ingredients and set aside.

Grill 4 pineapple rings in non stick pan. Cut in half and set aside, cover and keep warm. Cook chicken in pan until done.

assemble fajitas using your favorite tortillas. Layer slaw, chicken, avocado, pinapple. Top with favorite salsa if desired.
