Ingredients

1 cube Maggi mushroom bouillon
9 oz frozen spinach
22 oz boneless chicken breast
1/2 medium onion
1 tsp olive oil
1 tbsp corn starch
4 tbsp light sour cream (for serving)
Directions
Bring 4 cups water to boil in a pot. Throw in bouillon cube.
In a wide pan, spread the olive oil thin with a spatula. Heat.
While olive oil heats, cut the chicken into strips and slice the onions. Transfer to pan.
Meanwhile, add frozen spinach into stock.
After about 2 minutes, flip chicken strips over. After another 3 minutes, transfer chicken and onion into stock.
Stir in corn starch into about 2 tbsp cold water until completely dissolved. Pour gradually into pot.
Boil for about 10 minutes.
Let cool on stove for 20 minutes or so, and serve with a tablespoon of sour cream for each cup.
