Introduction

I love casseroles because you can make them ahead of time and then just throw them in the oven when you are ready. This one is pretty simple, has lots of tasty cheese, and uses summer veggies. This one is pretty simple, has lots of tasty cheese, and uses summer veggies. A winner.

Ingredients

    1 c. instant brown rice
    6 c. diced zucchini
    1 lb. lean ground turkey
    1 c. onion, diced
    1 tsp. oregano
    1 tsp. garlic salt
    1 can low fat cream of mushroom soup, undiluted
    1 c. 2% small curd cottage cheese
    1 c. low fat ricotta cheese
    1/2 c. low fat shredded cheddar
    1/2 c. grated Parmesan

Directions

Prepare rice according to box directions. Peel and dice zucchini, then saute until soft. Drain well. In a separate pan, saute turkey and onion. Add rice, seasonings, and soup and mix well. Place half of squash in a 2.5-qt casserole. Cover with turkey mix. Spoon cottage cheese and ricotta on top. Add rest of squash. Sprinkle with cheese.

Bake at 350 degrees for 35-40 minutes.

Serving Size: 6 generous 1.5 cup-sized servings
