    - 1/2 medium onion, finely diced
    - 1/2 cup shredded carrots, finely diced
    - 3/4 cup mushrooms, finely diced
    - 1 large zucchini, finely diced
    - 2 cloves garlic
    - 12 oz Beef-less Ground Beef
    - 2 Tbsp chili powder
    - 1/2 tsp cumin
    - 15 oz can crushed tomatoes
    - 1/4 cup water
    - 1/4 cup brown sugar (not packed)
    - 2 Tbsp red wine vinegar
    - A couple of dashes Frank's Red Hot Sauce
    - 1 Tbsp Worcestershire sauce
    - 2 Tbsp creole mustard
    - 2 Tbsp tomato paste
    - Salt, to taste
    - Pepper, to taste


Nutritional information includes "meat" mixture only. The bun or sandwich thin is not included.


1. Finely dice the onion, carrots, mushrooms, zucchini and garlic (or process in a food processor).
2. Cook the vegetables and garlic, stirring occasionally, for 7-10 minutes, until most of the moisture is gone and the vegetables begin to brown.
3. Stir in the chili powder and cumin and then add the Beef-less Ground Beef to the pan.
4. Add the crushed tomatoes, water, brown sugar, vinegar, mustard, Frank's Red Hot, and tomato paste to the pan. Reduce heat to medium and simmer for 10 minutes, stirring occasionally and seasoning with S&P to taste.
5. Serve on wheat buns or sandwich thins.

Serving Size: Makes 8 sandwiches
