    1/4 cup vegetable oil
    1 cup chopped onions
    5 cloves garlic, minced
    1/3 cup flour
    1 tsp salt
    1 tsp black pepper
    3 lbs lean pork, cut in 1" cubes
    2 cups apple juice
    1 tbsp fresh rosemary chopped
    1 tbsp dijon mustard
    1 tbsp cider vinegar
    3 cups apples, peeled and thickly sliced
    2 cups turnip, cut in 1/2" cubes


In large Dutch oven or flameproof casserole dish, heat 1 tbsp oil; add onions and garlic. Saute until tender and then remove and set aside.

In large bowl, mix together flour, salt and pepper; add pork, in batches to coat. Add 1 tbsp of oil to pot, brown pork on medium-high heat. Add remaining oil as needed for browning remaining pork. Remove pork from pot and set aside.

Deglaze pot with the apple juice, increase heat to high. Return meat and onions to pot, along with rosemary, mustard, vinegar, apples and turnip; mix well. Bring to boil and cover.

Transfer Dutch oven to 350-degree F oven; bake, stirring occassionally, until meat is fork tender, about 1-1/2 hours.
