A basic and cozy meal for a chilly, dreary day! A basic and cozy meal for a chilly, dreary day!
Number of Servings: 8

Ingredients

    3 cups or 1 bag of split peas
    1 onion, chopped
    6 cloves garlic (fewer, if preferred)
    3 stalks celery, chopped
    2 carrots, chopped
    1 cup pearled barley
    Bay leaf
    Salt and pepper to taste

Directions

Saute the onion in water. Press garlic into onion and cook another minute or two. Add the split peas and cover with broth. Bring to a boil. Add the celery, carrots, bay leaf and barley and boil gently until the split peas and barley are soft. Add more broth or water if needed to keep the soup covered. Salt and pepper to taste.

This is a throw-it-together-until-it-looks-and-tastes-right kind of meal, so feel free to add or subtract ingredients as you like!
