Ingredients

    6 boneless skinless chicken thighs
    64oz chicken broth (two 32oz boxes or cans)
    5 small red potatoes
    1 medium head of cabbage
    4 large carrots
    2 medium onions

    1/2 tsp black pepper
    1tsp poultry seasoning
    1tsp Adobo
    1tsp garlic powder
    3tbs dried parsley flakes
    1 packet Swanson Flavor Boost (chicken) - optional
    dash salt


Tips

(you may want to add a touch more salt to taste upon serving, but I was trying to keep this recipe as low-calorie, low sodium as possible)

at the time I made this recipe, the Swanson flavor boost was not found, but there are 30 calories per packet, adding approximately 2 calories per serving.


Directions

Trim excess fat/skin from boneless skinless chicken thighs, and cut into cubes. Peel and slice carrots, dice onions, and chop cabbage. Add to 5qt crock pot, then pour in chicken broth (I prefer to use the lower sodium broth, but choice is up to you.) Add in seasonings, simmer in crock pot 4-6 hours

Serving Size: makes approximately 12, 2-cup servings
