Ingredients

    1 bag white corn tortilla chips
    1 pound ground beef
    1 can "Ranch Style" beans
    3 cups cheddar cheese, grated
    1 can cream of mushroom soup
    1 can cream of chicken soup
    1 can "Mild" Rotel Tomatoes and Chilies
    2 teaspoons chili powder
    1/2 cup onion, chopped (optional)

Directions

Use a 4 or 5 quart crocpot and spray with non-stick cooking spray. Completely cover bottom of the pot with slightly crushed tortilla chips. Combine soups, rotel tomatoes, chili powder, and onion in a seperate bowl and blend with a whisk. Brown ground beef in a skillet; drain fat, then add ranch sryle beans to it ( Do not drain beans) and mix together. Layer half of the beef mixture over the chips, then half the soup mixture over the beef, ending with half the cheese over the beef. Repeat these layers once more beginning with the chips and ending with the cheese. Cook on high in crockpot for 2 1/2- 3 hours.

    This sounds tasty, but the nutrition data was calculated from 1 lb. lean ground beef only. The chips, beans, cheese, soups, etc. aren't included. Bummer! When I have time, I'll calculate it myself with accurate data. For now, I'll keep looking for a recipe with relevent nutrition info. - 5/31/10

    Very Good
    This was good. I couldn't find "ranch style beans" but I did find Fiesta beans. I wasn't sure how to eat it. We just used the rest of the bag of chips and scooped it like a taco dip. - 7/30/13
