    1/2 pounds sirloin or tenderloin, cut thin into 2 inch strips
    1/2 cup sour cream
    1/2 cup beef stock
    1/4 cup butter
    1 shallot, finely chopped
    8oz sliced mushrooms
    1 t garlic powder
    1 T ketchup
    freshly ground pepper


Using 1/2 of the butter, pan fry quickly the beef strips in high heat browning on all sides. Make sure that the temperature is high enough to brown the beef but not to burn the butter. Set the beef strips aside once browned.
Using the same pan add the remaining butter then saute onions and mushrooms.

Now add the beef stock, ketchup, and garlic, bring to a boil then reduce until 1/2 the volume.

Lower the heat, then add the sour cream. Cook until hot but do not simmer or boil, otherwise it will curdle.

Season with salt and pepper then remove from heat, then mix in the cooked meat.

Serving Size: makes 2
