    1 lb penne
    4 T olive oil
    2 med heads cauliflower, cut into small florets
    salt and pepper
    4 cl garlic, chopped
    4 cans Diced tomatoes
    1 c kalamata olives, chopped
    4 T capers, drained
    1/2 t crushed red pepper
    4 T chopped fresh Italian Parsley, chopped


Top with parmesan if desired.


Cook pasta. Meanwhile heat oil in large pan over med-high heat. Add cauliflower, 1/2 t salt and pepper. Cook, tossing, until golden, 4-6 min. Add garlic and cook, stirring, 1 min. Add tomatoes and their juices, olives capers, and crushed red pepper. Cook, until cauliflower is tender, 8-10 min. Toss pasta with sauce. Top with parsley.

Serving Size: makes 8 servings
