Introduction

Ingredients

1 tsp olive oil
3 cloves garlic, crushed or sliced
1 onion
3 bell peppers (red, orange, yellow), coarsely chopped
1/4 cup sliced mushrooms
12 oz. prepared tomato marinara sauce
1 fl. oz white wine
2 tbsp grated Parmesan cheese
Directions
Heat oil in pan over medium heat.
Add onion and garlic, saute' for a few minutes until onion is translucent.
Add bell peppers.
Cook for another 4 minutes or so, until peppers start to look tender.
Add mushrooms and any desired spices, stir in white wine to deglaze pot.
Cook for another minute or two, stirring occasionally.
Add marinara sauce.
Continue to simmer while you prepare pasta, gnocci, or other accompaniment for sauce.
Before serving, sprinkle Parmesan cheese over (optional).
Also, I like to sprinkle some crushed red peppers into mine to add a little kick.
