    1/2 cup chopped oil-marinated sun-dried tomatoes
    6 oz. firm silken tofu, drained and crumbled
    2 cloves garlic, chopped
    2 tablespoons chopped fresh basil or 1/2 tablespoon dried basil
    1 tablespoons balsamic vinegar
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1 tablespoons olive oil
    1/2 small can marinated artichokes, drained and chopped
    1 tablespoons fresh parsley
    soy parmesan (optional)


Cook the ziti or pasta of your choice al dente. Meanwhile, in a food processor, combine the tomatoes, tofu, garlic, basil, vinegar, salt, pepper, and olive oil. Process to a smooth consistency. Drain the pasta and toss with the sauce and artichokes. Sprinkle with the parsley and soy parmesan, if desired.

Serving Size: Yields approx. 1 cup: Serving Size is 1 tbs
