    1 cup quinoa
    1 large oyster mushroom
    2 cups veggie broth
    1 cup raw adzuki beans, soaked overnight
    2 garlic cloves
    1 shallot chopped
    2 cups swiss chard chopped
    2 Tb. canola oil
    salt and pepper to taste


Soak beans overnight in ample water. Drain and simmer in 2 cups of water for 40 minutes to an hour.

Rinse quinoa before adding to pot with heated broth. Cook on low for 15 minutes. All of the broth should NOT have disappeared.

In a separate pan, heat coconut oil and saute the garlic and shallot until clear. Add chard and mushroom to garlic mixture and saute for 5-10 minutes, until the chard is soft. Add quinoa and beans to chard mixture. Cook for 5 minutes, stirring frequently. Let sit 5 minutes before serving. Season to taste.
