    EVOO (2 tbsp)
    *1 med yellow onion, chopped
    Garlic, 4 cloves, chopped
    *Cumin - ground (2 tsp)
    Diced Tomatoes, No Salt Added, 1 (15oz can)
    Vegetable Broth, 1 cup
    100% Pure Pumpkin Puree, 1 (15oz can)
    Chili powder, 1 tbsp
    *1 Chipotle Pepper in 1 Tbsp Adobo Sauce
    Oregano, ground, 1 tsp
    Bush's, Black Beans, 2 (15oz can)
    Pumpkin Seeds, .5 cup
    Cilantro, raw, 4 tbsp, chopped
    *Avacado, 1 medium whole avacado, chopped
    optional, greek yougurt for garnish


Saute onion in EVOO, until soft
add garlic and cumin, saute 2 more min.
add toms,broth, chili powder, chipotle pepper, oregano, beans, pumkin puree. bring to a boil and simmer 20 minutes. add cilantro. Garnish with avacado, seeds and yogurt.
