In the last year, I've become violently allergic to wheat. I often make the Atkins MiM (in many different flavors), so I thought I'd make one that will work for a Reuben sandwich. This will! Ingredients

    2 TBS rye flour
    2 TBS flax meal
    1 tsp carraway seeds
    1 egg
    2 TBS olive oil (or coconut oil)
    1 tsp baking powder (optional)

Tips

I sliced the roll horizontally and it worked very well for sandwiches. It will be denser than a regular hamburger bun or rye bread.


Directions

1. Mix all ingredients in a small bowl.
2. Pour the mix into a wide, shallow microwave-safe bowl. (You want a bowl that will yield a 'hamburger-size' roll.)
3. Microwave for 2 minutes.

Serving Size: 1 sandwich roll
