    Cooking spray.
    8 inch frying pan.


Chop mushrooms and throw in hot pan. Stir. Add peppers and spinach. Gently stir until veggies are cooked. Remove veggies and spray pan with cooking spray. Add egg substitute. cook for 2 minutes at medium heat. Add veggies. Fold over one-half of omelet. Top with feta cheese and cook another 3-5 or until feta cheese begins to melt. Eat.
