Number of Servings: 12


    1 3/4 c. whole wheat flour
    1/2 c. Splenda
    2 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp. salt
    3 large bananas, mashed
    4 egg whites or 1/2 c. egg substitute
    1 tsp vanilla


1. Preheat oven to 350 degrees.

2. Beat bananas, egg, splenda and vanilla until smooth.

3. Combine flour, baking soda, baking powder, and salt in a small bowl.

4. Stir flour mixture into banana mixture until just combined.

5. Pour into loaf pan sprayed with nonstick spray.

6. Bake for about 40 minutes, or until the crust is brown and a toothpick comes out clean.
