Ingredients

1 cup quinoa(dry)
1.5 cups oat flour
1.5 teaspoons baking powder
pinch salt
.5 teaspoon baking soda
.5 cup dried figs(or other dried fruit)
.75 cup skim milk
1/3 cup honey
1 large egg
1 teaspoon vanilla extract
1/4 cup apple sauce
Tips
***Oat flour can be made by simply taking oats and grinding them in a blender. The same goes for flax meal(Just take flax seeds and blend them)
Directions
1) Cook quinoa in 2 cups water for about 15-20 minutes(or until quinoa has soaked up all water)
2) In a separate bowl, stir oat flour, baking powder, salt, dried figs, and cooked quinoa
3) In another bowl, stir together milk, honey, apple sauce, egg, and vanilla.
4) Add liquid mixture to dry ingredient mixture. Lightly stir until all ingredients are combined
4) Evenly pour mixture into a muffin pan(12 muffins)
5) Bake 25-30 minutes on 350 F until muffins are golden brown on top.
