    1 lb Skinless Chicken Thighs
    1/2 tsp Ground Black Pepper
    1/4 tsp Ground Ginger
    1/8 tsp Salt
    2 1/2 tsp Olive Oil
    1/2 cup Chicken Broth
    1/4 cup Water
    1 1/2 tsp Cornstarch
    1/4 tsp Ground Mustard
    3 tbsp Sour Cream
    2 tbsp Dijon Mustard


Warm the oil over medium heat. Use salt and pepper to season both sides of the chicken. Add the chicken and saute 3-5 minutes per side until browned and almost cooked through. Transfer to platter.

Whisk the broth, cornstarch, water, ginger, ground mustard and dijon mustard into the skillet. Bring to a boil, whisking until sauce thickens. Remove from heat. Whisk in sour cream until smooth.

Return the chicken to the pan and allow to simmer 5-7 minutes or until finished cooking.

Makes 4 servings.
