Introduction

Ingredients

    1 Cornish Hen, split and skinned
    3/4 tsp Ground Sage
    1/2 tsp each Ground Allspice, Black Pepper, and Dried Rosemary, crumbled
    1 tbsp Olive Oil

Directions

In a small bowl, combine the sage, allspice, pepper and Rosemary. Coat the hen first with the oil, then the herb mixture, rubbing well. Cover the hen with plastic food wrap & refrigerate for a t least 1 hour or up to 3 hours.

Preheat the broiler, setting the rack 8 inches from the heat. Arrange the hens on a broiler pan and broil for 8 minutes, then turn over and broil 7 to 8 minutes longer or until the juices run clear when a thigh is pricked with a fork and a leg moves easily in its socket. If the hens are over browning, tent them with aluminum foil during the last few minutes of broiling. Serves 2. Recipe from Live Longer Cookbook.

    Took a little longer to cook than the recipe stated. Good recipe. I cut the hens in half so each of my family got their own half. - 1/25/08
