Number of Servings: 12


    4 or so bananas, mashed
    1/3 cup melted butter
    1 egg, beaten
    1 cup sugar
    1 tsp vanilla
    1 tsp baking soda
    1 dash of salt
    1/2 cup Whole wheat pastry flour
    1 cup flour
    1/2 cup nuts


You can play around with the distribution of wheat flour to white flour, the number of bananas and could easily cut back on the sugar. It's a quick and EASY recipe. Perfect for a weekend morning with leftovers for grab and go breakfasts throughout the week.


Melt butter in large bowl and then mash bananas into butter. Pour in egg, sugar and vanilla and mix. Add salt and baking soda and mix. Add flours and mix. Add nuts if desired.

Pour in muffin cups or loaf pans. Bake at 350. I bake my muffins for 30 minutes, but a large loaf might take up to an hour.

Serving Size: 12 larger muffins or 24 smaller ones
