    Chives or Scallions, .5 tsp dried
    Channel Catfish, 18 oz
    Dijon Mustard, 2.25 tsp
    Lemon Juice, 1 lemon yields
    Fat Free Sour Cream, 2 tbsp
    Onion powder, .25 tsp
    Garlic powder, .5 tsp, divided
    Parsley, dried, .5 tsp
    Salt & Pepper as needed (not included in calculations)


Preheat Oven to 400. Season fillets on each side with salt, pepper, and garlic powder. Roast catfish on lightly sprayed cooking sheet about 12-15 minutes. Catfish will be opaque in center and have reached 145 degrees internally. Remove catfish from over and serve immediately with vinaigrette below.

Vinaigrette (can be done ahead of time):
Whisk Dijon mustard, lemon juice, and sour cream in bowl. Gradually fold in herbs. Salt and pepper, if desired. Refrigerate until ready to use.
